This stuff is great! Great when you grill any pork or chicken. Turned out to be an awesome glaze for a Southwestern Meatloaf too, not to mention it's a great dipping sauce as well.
Ingredients: 5-8 Canned Chipotle Chiles in Adobo Sauce (I use 6.) 3 TBS Olive Oil 1 Large Onion, Chopped (any size cut is fine since it'll be pureed) 2 Cloves Garlic (the jar stuff is fine) 28 OZ Ketchup 1/3 Cup Firmly Packed Brown Sugar 1/3 Cup Red Wine Vinegar 1/4 Cup Worcestershire Sauce 1/4 Cup Yellow Prepared Mustard
Method: Chop chiles in sauce. Heat the oil and cook onion and garlic until soft and clearing.
Add the remaining ingredients, bring to a gentle boil, stirring constantly and then turn down and let simmer about 15 minutes.
Let cool. Transfer to a blender and thoroughly blend.
Season to taste with salt and pepper.
-The chipotles in adobo sauce come in cans that this recipe alone won't use up. Cut up a chipotle and add to potatoes or just use some of the adobo sauce........use the sauce with veges too.
-Salt nor pepper is needed actually...I've never added either.
-Freezes real well.
