This one is my own creation. Boneless, skinless chicken breasts with a garlic and beer reduction sauce.
INGREDIENTS:
3/4 tablespoon olive oil
2 boneless, skinless chicken breasts
10 whole cloves of garlic, skinned
2 teaspoons "Watch Your Eyes" rub (recipe below)
12 oz. of your favorite beer
Add chicken and garlic to heated oil, sprinkle with rub, and brown chicken on both sides.
Pour 4 ozs. of beer into pan and scrape up any bits stuck to the pan. Let beer boil out until the pan begins to sizzle again. Pour 4 ozs. of beer into pan and follow previous instructions. Remove chicken and keep warm. Pour the final 4ozs. of beer into pan, scrape up any bits, but when it's cooking down, leave a desired amount of liquid to be used as the sauce. Pour the sauce over the chicken and serve.
----Leave garlic in pan for the duration of the cooking.
----Use a different rub if you'd like. Emeril's Essence is always good and you can get his spice recipes at the Food Network website.
WATCH YOUR EYES RUB:
1/2 cup paprika
1/4 cup black pepper
1/4 cup sugar
3 tablespoons salt
3 tablespoons chili powder
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon cayenne
Mix thoroughly and store in a cool, dark place.
I normally make the rub in bulk because I use it on almost everything.
----When using rubs, save any leftover in a zipbag or tightlid container, then whenever you use any rubs, add the leftover to the rub that you've saved previously for a constantly changing rub I call "The General Rub"...over time the flavoring will slowly change but it will always be tasty.
