This soup is tops on the list of easy to make great tasting soups. You don't have to chop any veges or cook meats or anything like that. Yet, it tastes great and even better the next day.
Meatball Tortellini Soup
INGREDIENTS
· 1 can (14-1/2 ounces) reduced-sodium beef broth · 12 frozen cooked Italian meatballs (1/2 ounce each) · 3/4 cup fresh baby spinach · 3/4 cup stewed tomatoes · 1 can (11 ounces) Mexicorn, drained · 3/4 cup frozen cheese tortellini (about 20) Dash salt and pepper
DIRECTIONS
In a large saucepan, bring broth to a boil. Add meatballs. Reduce heat; cover and simmer for 7 minutes. Add the spinach, tomatoes and corn; cover and simmer for 7 minutes. Add the tortellini, salt and pepper; cover and simmer for 6-8 minutes or until tortellini is tender. Yield: 4 servings.
Makes only 4 servings so make extra batches……frozen spinach worked fine…..I used regular beef broth and then added no salt at the end…..and make sure they are italian seasoned meatballs…..ENJOY!!!
